Abstract
Despite the increased concerns about healthy eating, sales of chilled desserts have been buoyant, rising by around 40% at current prices to achieve a market value of £393 million in 2006.
Although all sectors of the market are in growth, the strongest upturn has been in sales of whole cold eating desserts. These are larger packs, suggesting the market expansion is being driven by a rise families or groups of people sharing a dessert. Nevertheless, the small cold eating sector - which consists mainly of individual portions in a twin pack - remains the largest in both volume and value terms. The hot eating sector is also experiencing an upturn, benefiting from the increased popularity of traditional recipes.
